Seafood Gnocchi with il Sole Saffron


½ kg Gnocchi

200g Shrimp

2 Zucchini, sliced to 2 -3mm thickness

16 -20 threads of Il Sole Saffron, soak with hot water for 20 mins

1 head Garlic, chopped  

½ Onion, chopped

½ teaspoon Salt

½ teaspoon Pepper

½ Glass of White wine

2 tablespoon Olive Oil



Heat 2 tablespoon of Olive oil in a non-stick frying pan set over a medium heat. Beat the garlic and onion together until soft. Add zucchini stir until crispy then add white wine & shrimp, finally add il Sole saffron and stir well. Remove and set aside in a warm place while you prepare the Gnocchi in a different pan.

A large pot of water until boiled, add salt. Put gnocchi and giving them just a couple of minutes more after they all float to the surface.

Remove with a spider, and transfer to the waiting sauce.
